Stewed Florentine cod

Ingredients for 4 people

- Soaked codfish gr. 800

- Ripe or peeled tomatoes gr. 500


- An onion

- 3 garlic spikes

- Parsley


- Sage or rosemary

- Flour

- Olive oil


- Salt and pepper

How to make Florentine cod

Remove the skin from the cod and carefully remove all the bones, then cut it into pieces of about 5 centimeters by 7.

Flour them and fry them in a little oil to which you will have added a clove of garlic and a few leaves of sage or rosemary.

Drain it and keep it on a kitchen paper. In a pan, brown the chopped garlic and onion cut into thin slices in 8 tablespoons of oil.

As soon as the onion withers, add the tomatoes, salt, pepper and cook for about 20 minutes.

Finally put the pieces of cod in the sauce, cook again for 10 minutes, sprinkle with chopped parsley and serve immediately.
