Sweet fried ravioli with orange filling and candied fruit

How to make fried sweet ravioli with an orange filling and candied fruit pounded in a mortar, a delicious recipe suitable for Carnival and for all other occasions.


Ingredients for 6 people

- 400 g of white flour

- 450 g of butter


- 150 g of candied fruit between cedar and pumpkin

- 2 egg yolks

- 1 orange


- 1 tablespoon of icing sugar

- abundant oil for frying

- a little flour for the pastry board


- salt

How to prepare fried sweet ravioli

Wash the orange, remove only the inner white part of the peel, cut the candied fruit into small pieces, then put everything in the mortar and beat for a long time until obtaining an almost creamy mixture.

Add 50 grams of softened butter and add it to the rest with a wooden spoon.

Arrange the flour on a work surface, put two egg yolks in the center and mix the ingredients adding the amount of warm and slightly salted water needed to obtain a soft and homogeneous paste.

Work the mixture with your hands and then spread it with a rolling pin on a lightly floured surface, in order to obtain a sheet about one centimeter high.

In the meantime, melt the remaining butter in a saucepan over moderate heat, and with a brush brush a generous amount over the entire surface of the dough, then fold the dough into four and spread it again with a rolling pin, butter it again, fold it and continue like this until the butter is finished, six times.

At this point roll out the dough into a sheet about two millimeters high.

Distribute the previously prepared mixture in regular piles, at a distance of about six centimeters from each other, on half of the pasta, then cover it with the other half of the dough and press with your fingertips around each pile.

With the cutter cut the ravioli taking care to seal them well.


Pour plenty of oil into a pan and when it is hot, but not boiling, dip the ravioli in it and brown them on both sides.

When cooked, pull them up with a slotted spoon, drain them and put them on absorbent paper.

Before serving sprinkle them with icing sugar.
