Baked salmon with mushrooms and spinach

How to cook salmon baked with mushrooms by wrapping fish steaks with spinach leaves and sprinkling everything with a tomato vinaigrette.


Ingredients for 4 people

- 4 slices of fresh salmon of about 150 g each

- 400 g of spinach leaves


- 1 lemon

- 500 g of champignon mushrooms already cleaned

- 20 g of parsley


- 4 tomatoes

- 12 tablespoons of extra virgin olive oil

- 3 tablespoons of apple cider vinegar


- salt and pepper

How to prepare salmon baked with mushrooms and spinach

Cut the champignon mushrooms into thin slices and brown them in a pan with 3 tablespoons of extra virgin olive oil, then sprinkle the lemon juice, salt and pepper.

Cook the mushrooms for 10 minutes and finally add the chopped parsley.

Keep them aside in warm.

In a pan with 1 liter of boiling salted water, dip the spinach leaves for 1 minute, then drain and let them cool in cold water.

Peel the salmon steaks and after salting them and pepper them gently wrap them in the spinach leaves.

Place the salmon in an oven pan with 3 tablespoons of extra virgin olive oil, sprinkle the lemon juice and bake at 180 ° C for about a quarter of an hour.

After blanching the tomatoes in hot water, remove the peel and seeds, then cut them into cubes.

In a pan heat the apple cider vinegar without boiling it, add 6 tablespoons of extra virgin olive oil and the diced tomatoes.


Cook for 2-3 minutes.

Place the champignons in a tray and put the salmon steaks wrapped in spinach on top.

Sprinkle everything with the tomato vinaigrette and serve.
