Beef sirloin with asparagus and tomatoes

Baked beef sirloin recipe to be served with a salad of asparagus and fresh tomatoes topped with lemon juice, oil, salt and pepper.


Ingredients for 4 people

- 800 g of sirloin steak

- 1 glass of dry white wine


- 1 bunch of asparagus

- 4 tomatoes

- butter


- lemon juice

- extra virgin olive oil

- salt


- black pepper

How to cook beef sirloin in the oven

Clean the asparagus and boil them in lightly salted water.

Drain them and let them cool, then remove the white part of the stem and cut the rest into small pieces.

Wash and dry the tomatoes, then cut them into wedges and put them in a bowl together with the asparagus.

Prepare a sauce with oil, lemon juice, salt and pepper, with this season the asparagus and tomatoes.

Rub the meat with freshly ground black pepper and a light layer of butter, then tie it with kitchen string.

Place the meat in the oven and cook it for about 20 minutes in a hot oven, pour in the glass of white wine and continue cooking over medium heat for another 20 minutes.

At the end of cooking put the salt.

Remove the meat from the oven, cut it into slices and serve it with the asparagus and tomatoes.
