Braised beef baby walker


How to cook braised beef baby walker, recipe with raw ham to be cooked in a pan with a description of the preparation that allows you to make it perfect.

Ingredients for 12 portions

- 1 sprig of sage

- 1,200 gr of beef walker

- 3 carrots

- 1 rib of chopped celery

- 2 cloves of garlic

- 100 gr. of diced raw ham

- 1 pickled onion with a few cloves

- 1 ladle of water

- 1 glass of dry red wine

- 1 sprig of rosemary

- 2 or 3 tablespoons of olive oil

- 1 knob of butter

- salt

- pepper

Preparation of braised beef baby walker

Chop the carrots, the celery stalk, the garlic cloves, the raw ham and add the salt and pepper.

With a knife make small cuts on the meat and fill these slits with the mince prepared, then tie the meat roll tightly with string and put it in a pan with the oil and butter, then brown the meat on all sides .

Then put the pickled onion with the cloves on the bottom of the pan, a ladle of water and a glass of red wine.

Cook slowly for about two hours checking that it does not dry out too much, and adding water and wine as needed during the cooking period.

When the meat is cooked, remove it from the heat, let it cool and slice it, spreading it over the cooking surface.
