Here is the recipe for making Canavesana soup with turnips, bacon, Parmesan cheese, homemade bread, meat broth, butter, oil, garlic. Instead of turnips, savoy cabbage can also be used.


Ingredients for 4 people

- 100 g of bacon spread

- 1 kg of turnips or savoy cabbage


- 50 g of butter

- 1 clove of garlic

- 1 tablespoon of extra virgin olive oil


- plenty of grated Parmesan

- 10 slices of homemade bread

- 1 liter and a half of meat broth


- salt

How to prepare canavesana soup with turnips

Wash the turnips, clean them and break them up.

Make a beat with the bacon and garlic, then put it in a saucepan and brown it.

After add the turnips and continue browning for about five minutes.

Finally pour the broth, mix, cover and leave to cook for half an hour; if necessary add salt.

Meanwhile, brown the slices of bread on both sides in a pan with 40 g of butter and a tablespoon of oil.

Grease the baking dish and put a layer of slices of bread on the bottom, arrange a layer of turnips on it, then sprinkle abundantly with grated cheese.

Repeat the layers in the same order until the ingredients are used up.

Pour the remaining broth over the pot a little at a time and cook in the oven for about half an hour.
