Carriage mozzarella with sandwich bread

Easy recipe to prepare a famous Neapolitan specialty, mozzarella in a carriage, using slices of pan carré, a little flour and an egg.


Ingredients for 4 people

- 1 medium mozzarella

- 8 slices of pan carré without the crust


- 1 tablespoon of white flour

- 1 egg

- fry oil


- salt

How to prepare mozzarella in a carriage

Cut the mozzarella into four slices and arrange them on four slices of pan carré, then cover them with the other four slices of pan carré, pressing lightly with the palm of the hand, to make them adhere well.

Put the flour on a plate and, keeping the mozzarella sandwiches tight, pass only the edges of the bread in the flour.


Pour a little cold water into a small bowl and quickly pass the edges (only the edges), floured with sandwiches, in order to avoid the spillage of the mozzarella during cooking.

Beat the egg on a plate, with a pinch of salt.

Pour plenty of oil into the pan and quickly pass the sandwiches in the beaten egg and, when the oil is hot, brown them on both sides.

Remove the sandwiches from the pan and place them on absorbent paper, salt them slightly and serve hot.
