How to prepare battered mussels morsels, a recipe with few ingredients that requires simple preparation before frying in a pan.
Ingredients for 4 people
- 2 dl of milk
- 1 spring onion
- 1 celery heart
- 2 kg of fresh mussels
- 1 egg
- 4 tablespoons of flour
- abundant oil for frying
- salt
Preparation of the fried mussel morsels
Prepare the batter, beat the egg and add the salt, flour and milk to the wire, then leave the mixture to rest for half an hour.
Wash the mussels under running water and remove the byssus, then transfer them to a pan.

Put the lid on and leave on a very high flame, waiting for all the mussels to open, taking care to mix every now and then.
Once this is done, let the mussels cool and peel them.
Add the sliced clams, spring onion and celery to the batter and mix.
In a frying pan with high sides, heat a lot of oil and pour 1 spoonful of battered mussels at a time, then drain the fried morsels with the perforated scoop as they reach golden brown, calculate about two minutes for each morsel.
Pass them on kitchen paper to remove excess grease.
Freshly salt and serve, accompanying to taste with seasonal salad.
