Ingredients for 4 people
- 4 fresh cucumbers
- 4 tablespoons of extra virgin olive oil
- 2 tablespoons of vinegar
- 1 tablespoon of finely chopped parsley
- salt and pepper
How to prepare cucumber salad
Peel the cucumbers, cut them in half lengthwise and remove the seeds, then cut them into thin strips.
Arrange the prepared cucumbers in a small salad bowl, then put it in the refrigerator for about half an hour, covered with a plate.
When serving the salad, beat the oil, vinegar, salt, a pinch of freshly ground pepper and parsley in a bowl, then season the cucumbers by mixing them carefully.
