How to make pan-fried chicken livers, a recipe that allows you to obtain a very thick sauce cooked in red wine, to be spread on roasted bread croutons.
Ingredients for 4 portions
- 1 glass of red wine
- 1 tablespoon of chopped parsley
- 400 gr. chicken livers
- 50 gr. of butter
- juice of half a lemon
- salt
How to cook chicken livers
Clean the chicken livers from the fat, with the help of a pair of kitchen scissors, and froth 30 gr. of butter in a pan, then add the livers, cooking over high heat for three minutes, stirring often, until they become dark.
Season with salt, add the red wine and boil, continue cooking for another 5 minutes, stirring occasionally and adjusting the flame to reduce the wine to such a point as to obtain a fairly thick sauce.
After turning off the fuogo and add the remaining butter, parsley and lemon juice, stirring until the butter completely melts.
