- 600 g of thin luganela from Monza
- half a glass of dry white wine
- 4 sage leaves
- hot polenta as a side dish
Preparation of the luganega of Monza
Prick the luganega with a fork, then put it on the fire in a pan containing boiling water, making the boil rise before draining it.
Cut it into pieces and put it in a pan with the white wine and sage, cook it on a high flame for a maximum of ten minutes, waiting for the white wine to evaporate completely.
Pan-fried luganega should be served immediately, preferably accompanied with hot polenta.
