How to make cod fillets in a pan, a recipe that includes, among the necessary ingredients, tomatoes, capers and olives, to be served with toasted croutons.
Ingredients for 4 portions
- 3 tablespoons of pitted and chopped black olives
- 2 tablespoons of drained pickled capers
- 4 tablespoons of olive oil
- 1 onion
- a handful of chopped parsley
- a pinch of oregano
- 600 gr. of cod fillets
- 500 gr. peeled tomatoes
- 7 or 8 cherry tomatoes
- salt and pepper

Preparation of cod fillets in a pan
Slice the onion and fry it with oil and a little water.
After add the peeled tomatoes, capers, olives, salt, pepper.
Cook for about 10 minutes, stirring often.
In this sauce, put the fish fillets and continue cooking for about a quarter of an hour, turning them once.
At the end of cooking add the whole cherry tomatoes, olives, parsley and oregano.
Serve with toasted croutons.
