Pasta with peas and artichokes


How to make peas and artichokes pasta, recipe including tomatoes and macaroni among the necessary ingredients, with detailed preparation procedure.

Ingredients for 4 people

- 350 gr. of macaroni

- 2 artichokes

- 150 gr. of shelled peas

- 300 gr. of ripe tomatoes

- 1 onion

- half a lemon

- 1 bunch of parsley

- 1 dl. of extra virgin olive oil

- 2 tablespoons of grated Parmesan cheese

- salt and pepper

How to make peas and artichokes pasta

- Clean the artichokes, cut them into thin wedges and immerse them in cold water acidulated with the juice of half a lemon.

- Blanch the tomatoes in boiling water, drain them well and remove the peel and seeds, then cut the flesh into small cubes.

- Wash the parsley, dry it and finely chop it.

- Peel the onion and chop it.

Ragù cooking

In a pan with the oil, make the chopped onion wilt; add the drained artichokes, the peas and cook for about 5-6 minutes, then add the diced tomatoes, salt and pepper.

Continue cooking for another 7-8 minutes with the pan covered and moderate heat, then add the chopped parsley.

Macaroni cooking

Cook the macaroni in abundant salted water, drain and season with the ragù of artichokes and peas, add the cheese and serve hot.
