How to make peppers stuffed with cheese, the original recipe calls for the use of goat cheese which can be replaced with Tuscan caciotta or dry ricotta.
Ingredients for 4 people
- 4 medium sized peppers mixed red, yellow and green
- 250 g of white feta-type goat cheese
- 4 eggs
- 2 tablespoons of liquid cream
- 1 dl of extra virgin olive oil
- salt
How to prepare peppers stuffed with cheese
Wash and dry the peppers, remove the stem, seeds and internal skins, taking care not to break them.
Put about 220 g of cheese in a bowl and mix it with salt and eggs, then fill the peppers with a teaspoon and place them in the lightly greased baking dish.
In a bowl mix the remaining cheese with the cream and spread it over each pepper, sprinkle them with a drizzle of oil, salt lightly and cook in a moderate oven for twenty minutes or until the peppers are golden brown, then serve immediately.
