How to make Piedmontese gardener, recipe with potatoes and carrots, for an ideal side dish to be combined with slices of cold roast or boiled chicken, alternatively it is also suitable as a valid appetizer.


Ingredients for 4 people

- 350 g of new potatoes

- 2 new carrots


- 12 artichokes in oil

- 8 lettuce hearts

- 3 bunches of radishes


- 1 dl of extra-virgin olive oil

- the juice of 1 lemon

- salt


How to prepare the Piedmontese gardener

Boil the potatoes in plenty of lightly salted water, then drain and peel them.

Clean the carrots and boil them in another pan in lightly salted water, then drain and cut them into slices.

In a bowl, beat the oil with the salt and lemon juice, to obtain a homogeneous sauce.

Clean and wash the lettuce hearts and radishes, dry them and arrange the lettuce hearts in the center of a round tray, then slice the radishes thinly.

Arrange the various vegetables around the lettuce, alternating them in order to obtain a pleasant chromatic effect, then season everything with the prepared sauce.
