Polenta croutons with cod cream

Recipe to prepare excellent croutons with slices of toasted polenta, necessary ingredients, preparation and cooking times.


Ingredients for 4 people

- 8 slices of pre-cooked polenta

- 600 gr. soaked cod


- 6 tablespoons extra virgin olive oil

- 1 tablespoon of milk

- 1 clove of garlic


- 1 sprig of parsley

- salt and pepper

How to make polenta croutons with cod

Place the cod in a saucepan, cover it with water and bring to a boil.


Froth the liquid, cover with a lid and let it rest for about 20 minutes, then cook for another 10 minutes, then drain the fish, peel it and remove the bones, crumble it and crush it with the help of a mortar.

Transfer the mixture into a pan and heat everything, incorporating the oil and mixing with energy.

The quantity of oil depends on the quality of the fish and should only be added as long as the cod is able to absorb it.
