Ratatouille baked with aubergines and courgettes


How to make ratatouille, it is a very tasty recipe of French origin based on mixed vegetables, including aubergines, peppers, potatoes, courgettes, tomatoes and onions.

Ingredients for 4 people

- 2 aubergines

- 2 courgettes

- 1 yellow or red pepper

- 300 g of ripe and firm tomatoes

- 400 g of non-floury potatoes

- 1 onion

- 30 g of parsley

- 1 sprig of basil

- 3 tablespoons of extra virgin olive oil

- salt and pepper

How to prepare the ratatouille in a microwave oven

Wash the aubergines and cut them into cubes, then salt them, put them in a colander and leave them for at least half an hour, so that they lose their bitter vegetation water.

Meanwhile, prepare the other vegetables: wash the pepper, remove the stem, the filaments and the internal seeds, then cut it into strips.

Wash the courgettes and dice them.

Cut the onion into very thin slices.

Wash the tomatoes, remove the seeds and break them up.

Wash the parsley and basil, then chop them.

Peel the potatoes and dice them.

Also wash the aubergines to remove excess salt, then dry them.

Put a pan to brown in the oven and program it at maximum power for four minutes, then
arrange the onion and all the oil.

Cover and put it back in the oven, always programmed at maximum power, for three minutes, remembering to turn the onion halfway through cooking.

Add the chopped parsley and tomatoes, mix and put in the oven for another two minutes.

At this point add all the other vegetables, excluding the peppers, pepper, mix, cover and put the container in the oven for ten minutes, turning the vegetables at least three times.

After ten minutes add the peppers, mix and continue cooking in an open container for another eight minutes.

Keep in the oven off for two minutes before serving.
