Rosina-style eggs with lettuce and mayonnaise

How to make boiled eggs with beautiful rosina, recipe to be served in portion dishes with salad on the bottom, mayonnaise for filling and with chopped yolks scattered on top.


Ingredients for 4 people

- 200 g of mayonnaise

- 2 tablespoons of extra virgin olive oil


- 6 eggs

- 1 head of lettuce

- salt


Preparation of the eggs to the beautiful rosina

Remove the outer leaves of the lettuce, wash the lighter ones, dry them in the centrifuge and break up the larger ones, setting them aside in a bowl.

Arrange the eggs in a saucepan and cover them with cold water, bring to the boil, calculating 10 minutes of cooking.

As soon as the eggs are firm, drain them and cool them under a stream of cold water.

Shell the eggs, cut them in half, remove the yolks and arrange the egg whites, with the side facing upwards, on a plate, filling the respective cavities with a spoonful of mayonnaise.

Chop the yolks and sprinkle them on the half-eggs, season the salad with oil and a little salt, then put it on the bottom of 4 serving plates and place 3 half-eggs on each container with the beautiful rosina and serve immediately.
