How to make a velvety sauce, recipe with chicken broth, few necessary ingredients, fast preparation procedure with cooking in a saucepan.


Ingredients for half a liter of sauce

- 70 g butter

- 30 g flour


- 3/4 liter chicken broth

- salt

- White pepper


Preparation of the velvety sauce

Melt the butter in a saucepan, then quickly incorporate the flour, stirring constantly using a wooden spoon and cook until the mixture is pale yellow.

Dilute the mixture just prepared with half of the hot broth and, continuing to mix, complete with a pinch of salt and a little freshly ground white pepper.

Continue cooking for a further 30 minutes on a low heat, gradually adding the remaining hot broth and stirring constantly with the wooden spoon, until the sauce reaches the consistency of a cream.

Pass the sauce through a sieve and allow it to cool, stirring often, so as to avoid the formation of the classic surface skin.
