Baked potato nests with eggs and sausage

How to cook baked potato nests, recipe with sausage and eggs to be made in special molds covered with breadcrumbs, contains Parmesan cheese.


Ingredients for 4 portions

- 10 gr butter

- 2 tablespoons of breadcrumbs


- 4 tablespoons grated Parmesan cheese

- 2 medium potatoes

- 300 gr sausage


- 1 egg

- salt and pepper

How baked potato nests are made

Peel the potatoes, wash them and cut them into thin slices with a knife with an extremely sharp blade, the thickness of each must not exceed one millimeter.


Beat the egg in a bowl with a drop of water, salt and pepper, then pass the potato slices on it, after coating 12 already buttered molds and sprinkled with breadcrumbs. Place the potato nests in the preheated oven at 200 degrees for 10 minutes.

In the meantime, remove the sausage from the skin, crumble it and brown it in a non-stick pan until it has lost part of its fat and will be visibly toasted after a few minutes.

Drain the sausage from its fat and pass it on kitchen paper to dry it, in order to make it become more crunchy.
