Ingredients for 4 people

- 4 salmon trout fillets, weights about 200 gr each

- 2 fennel


- garlic

- extra virgin olive oil

- 1 lemon


- salt and pepper

Preparation of salmon trout fillets

Clean the fennel, removing the hardest external leaves and the coarsest filaments, then wash and cut them into very thin slices, after cooking them in a pan with a little oil, salt and a drop of water for about 8 minutes.

Arrange them in equal parts on 4 sheets of greased parchment paper, then place the washed and dried trout fillets on top, salt and sprinkle with coarsely ground pepper, cloves of garlic and shredded prepared fennel leaves, finally sprinkle everything with a drizzle of oil and the filtered lemon juice.

Bake in the preheated oven at 180 ° C for about 20 minutes, then take out of the oven and serve accompanying as you like with a side dish of already cooked vegetables.
