Ingredients for 6 people
- Flour gr. 400
- Sugar gr. 250
- Shelled almonds gr. 150
- 3 eggs
- 3 egg yolks
- A sachet of yeast
- Orange essence
- Little salt
How to make cantucci di Prato
Whisk well 2 eggs and the yolks with the sugar, then add the flour, baking powder, a few drops of orange essence and a pinch of salt.
Lightly toast the unpeeled almonds and, once cold, add to the dough.

With the dough, make 3-finger wide loaves and a finger high.
Place them on a well-spaced buttered and floured baking tray, brush them with a beaten egg and bake in the medium oven for about 15 minutes.
Remove them from the oven and with a knife cut them sideways to obtain the typical biscuits.
Put them back in the oven for about ten minutes to make them biscuit.
