Preparation of cheese and ham crepes
To make the crepes, beat the eggs and stirring constantly add the flour, milk and salt, in order to obtain a homogeneous mixture.
Grease a 15 cm diameter pan with a little butter. When it is hot, pour a spoonful of the batter and, moving the pan, distribute the mixture over the entire surface, to form a wide and thin crepe.
Cook the crepes on both sides until the batter runs out.
Spread a slice of ham over each crepe with a thin slice on top.
Roll the pancakes like cannelloni and arrange them in layers in a buttered baking dish.
Pour the béchamel flavored with salt, pepper, nutmeg and grated gruyere over the crepes.
Bake at 200 ° C for 20 minutes.
