How to make fried anchovies in a pan and marinade, recipe with detailed description of the flavoring procedure in a fragrant mixture obtained by simmering water, vinegar, garlic, onion, bay leaf, oregano and pepper.


Ingredients for 4 people

- 500 g of very fresh anchovies

- 1 clove of garlic


- 4 bay leaves

- 1 small onion

- a few tablespoons of flour


- 1/4 liter of olive oil

- 1 glass of vinegar

- 1/2 glass of water


- an abundant outlet of oregano

- 3 peppercorns and a pinch of salt

How to prepare anchovies in scapece

With a knife open the anchovies lengthwise, leaving them attached to one side, removing the spine and the head, but leaving the tail.

Gently wash them well, drain them, dry them lightly and pass them quickly in the flour, then fry them in a pan with plenty of hot oil on both sides.

As soon as the anchovies are fried, remove them from the pan and place them on absorbent paper, then add a little salt and arrange them in layers in a terracotta or glass container with a lid.

Meanwhile, pour half a glass of water, a large glass of vinegar in a saucepan, add a crushed clove of garlic, the onion cut into thin slices, bay leaves, a generous pinch of oregano and three peppercorns.

Leave to simmer slowly for a quarter of an hour.

Pour the mixture over the anchovies, so as to cover them completely.

Finally let it cool to room temperature, then cover the container with the lid and let it rest in a cool place.
