Fried courgette flowers in batter: traditional crispy recipe


How to make crispy fried courgette flowers, traditional recipe with few necessary ingredients and easy procedure to follow, from the preparation of the batter to frying in a pan, with subsequent draining and salting before serving.

Ingredients for 4 people

- 12 or 16 courgette flowers

- Flour gr. 100

- An egg

- White wine

- Olive oil

- Salt and pepper

- Fry oil

How fried courgette flowers are made

Put the flour in a bowl, add 2 tablespoons of oil, an egg yolk, salt and pepper.

Pour half a glass of white wine and the water necessary to make a smooth and not too thick batter.

Leave it to rest for about an hour and add the whipped egg whites.

Clean the flowers by removing the stems, the external green leaves and the internal pistil, then pass them in the batter and put them in a pan in boiling oil, frying them until golden brown.
