Ingredients for 6 people
- 1 kg. of wet stockfish
- 2 cloves of garlic
- some parsley
- 30 gr. of capers
- 150 gr. of green and black olives
- 50 gr. of anchovies
- 80 gr. of tuna
- 1 kg. of potatoes
- 500 gr. peeled tomatoes
- a glass of white wine

How to cook Genoese stewed stockfish
In order to obtain a sauce, chop the garlic, parsley, capers, tuna and anchovies, adding a little oil.
In a pan put the wet stockfish in pieces, add a little salt and pepper, then spread over half the sauce, then a layer of fairly thick sliced potatoes, the remaining sauce, the remaining oil, wine, tomatoes and olives .
Cook over moderate heat for about two hours.
