How to prepare the ham and lemon risotto, what ingredients are needed for this recipe with cooking in meat broth and the procedure to follow.


Ingredients for 4 portions

- 50 gr raw ham ham

- half a glass of white wine


- 750 cl of meat broth

- 250 gr. Carnaroli rice

- 1 onion


- 60 gr. butter

- 1 lemon

- 2 spoons of parmesan cheese


How to make ham and lemon risotto

Boil the broth, peel the onion and chop it, then chop the raw ham and wash the lemon, the latter to be grated in the yellow part.

Sauté the onion with a knob of butter, making sure that it does not color, then add the rice by making it toast for about two minutes, stirring constantly with a wooden spoon.

Pour in the white wine, letting it evaporate while keeping the heat high.

Once this is done, add the boiling broth a little at a time, stirring occasionally, continuing to cook for about fifteen minutes, until adequate absorption of the broth, then add the pieces of raw ham, stirring and continuing to keep on the fire for another 2 minutes, after which add the remaining butter, grated Parmesan and lemon peel, mix again to mix well and then serve still hot on the table.
