Ingredients for 10 people

- 1 liter red wine vinegar

- 1 clove of garlic


- 1/2 onion cut into wedges

- 1/2 sliced ​​carrot

- 1/2 sliced ​​celery rib


- zest of half a lemon

- half a stick of cinnamon

- 3 grains of white pepper


- 3 star anise grains

- 1 g ginger or chili pepper

- 2 bay leaves

Preparation homemade balsamic vinegar

Arrange all the ingredients in an airtight and perfectly dry terracotta or glass jar.

After this time, transfer the contents through a special filter paper, of the type also used for homemade liqueurs, into a clean and dry bottle.

Close the bottle with a new cork, making sure that it closes properly.

Store the bottle in a cool dark place.
