Madeira sauce for roasted meat

How to make madera sauce with madera wine or dry marsala, butter, flour, meat broth, white pepper. This sauce is suitable to accompany meat escalopes, grilled ham and roasted meat in general.


Ingredients for 1/2 liter of sauce

- 2 glasses of Madeira wine or dry Marsala wine

- 30 g of flour


- 50 g of butter

- 3/4 liter of lightly salted meat broth

- a little freshly ground white pepper


How to make Madeira sauce

Melt 30 g of butter in a saucepan, add the flour, mix thoroughly letting the flour begin to color, then add the boiling broth little by little, stirring constantly.

Leave the sauce to cook, stirring constantly with a wooden spoon, over moderate heat until it is reduced to about a fifth of its initial volume.

Add the madeira, a pinch of pepper, mix again and cook over moderate heat for another ten minutes or so.

Remove the sauce from the heat and add the remaining butter into small pieces, mixing with the wooden spoon.
