Mixed Catalan meat and fish paella

How to cook mixed Catalan paella, an original recipe with meat and fish, what ingredients are needed and detailed instructions of the entire preparation process, from the initial browning of the various components to the global cooking after adding the rice.


Ingredients for 8 people

- 400 gr of rice

- a quarter of chicken pieces


- 2 chopped chicken gizzards

- 200 gr pork loin cut into small strips

- 50 g diced bacon


- 50 gr diced lean raw ham

- 100 gr peeled shrimp

- 100 gr of cuttlefish


- 10 mussels already shelled

- 200 g of fresh shelled peas

- 200 gr peeled tomatoes without seeds

- 1 onion finely sliced

- 2 minced garlic cloves

- 1 dl of oil

- 50 gr butter

- 1 tablespoon of chopped parsley

- salt and pepper


How to prepare mixed Catalan meat and fish paella

Put oil and butter in a pan and, as soon as they are hot, add onion, pork, bacon, chicken and chopped gizzards.

After browning for fifteen minutes, add the shrimp and cuttlefish, mixing well using a wooden spoon.

As soon as the onion begins to brown, add the garlic and chopped tomatoes, leaving to cook on a low heat for 15 minutes on a covered container.

Taste, adjust salt and pepper, then add ham and peas.

Wet everything with a liter and a half of hot water, cooking for another fifteen minutes before adding the rice.

Leave to cook until the rice is cooked, it takes twelve to eighteen minutes depending on the type of rice used.


Five minutes before serving, add the well-washed mussels and parsley.

Keep in mind that this dish should be served immediately on the hot table.
