Olives seasoned with mint with red chilli pepper

Recipe for making seasoned olives to be served as an appetizer, a preparation with mint and oregano with rosemary, made spicy enough with the aid of red chilli.


Ingredients for 4 people

- 300 g green olives in brine

- 5 fresh mint leaves


- 1 pinch of oregano

- 1 sprig of rosemary

- 1 red chilli pepper in small pieces


- 4 cloves of garlic

- 1 tablespoon of olive oil

- salt


Preparation of olives seasoned with mint

Wash, dry, pitted the olives, using the suitable tool, then crush them with the meat tenderizer and just crush the garlic cloves, while keeping the pieces joined to the stem.

Wash the mint leaves and the sprig of rosemary, keeping only the leaves of the latter.

Put everything in the salad bowl with oregano, chilli pepper, salt and oil.

Turn over and leave to rest for about two hours, then remove the garlic and arrange the olives in a suitable bowl to be brought to the table, removing the excess oil.

To be served cold, but not too much.
