- 3 tablespoons of olive oil
- 4 eggs
- salt
- 6 slices of smoked bacon finely chopped
- 1 fairly large ripe tomato
How tomato and bacon eggs are made
Arrange the slices of bacon on the bottom of a fairly large pan with a non-stick coating, cook them over medium heat for about 3 minutes.
In the meantime, wash the tomato and, after drying it, cut it in two along the width.
With a wooden fork, move the bacon towards the edge of the pan and, in the space left free in the center, pour the oil, making it heat for about a minute, then add the two halves of the tomato and break the eggs by dropping them in the middle .
Just salt the tomatoes and eggs, continuing cooking over high heat for another 5 minutes, turning the tomatoes once in this time interval.
At the end, with a perforated ladle, pull everything up and transfer carefully to a plate before serving still hot.
