Ingredients for 4 people

- 350 g of rice

- 25 g of butter

How to prepare panara di Novara

Soak the dried beans for twelve hours.

Blanch the rinds in boiling water for five minutes, then cut into strips.


Clean and wash all the vegetables, chop the carrot, celery, tomatoes and white cabbage leaves.

Drain the beans and put them in a pan with the water, all the vegetables, the rinds, the nut and a pinch of salt.

Cover, boil and cook slowly for about two hours.

Chop the onion with the salami and put them in a pan with the butter and the chopped bacon, then brown everything on low heat for about ten minutes.

Add the rice and, stirring with a wooden spoon, make it flavor, then add the wine and let it evaporate.

Continue cooking the rice, always turning and pouring the broth a little at a time, and the cooked vegetables.


When the rice is cooked, put a pinch of pepper and remove it from the heat.

Leave the rice to rest for a few minutes before serving it.
