How to prepare risotto with prawns

Wash the prawns and put them in a pan with three quarters of a liter of lightly salted water, the whole spring onion and the aromatic bunch; bring to a boil and cook over medium heat for about fifteen minutes.

Drain the prawns, shell them, removing the black vein, crush the shells in the mortar, add them to the broth, raise the boil and then immediately strain the broth and set it aside.
