Rum mascarpone cream with biscuits, candied fruit and cherries

How to make an excellent rum mascarpone cream, a semifredda preparation that replaces ice cream very well and, without garnish, can be a delicious filling for pandori and panettone.


Ingredients for 4 people

- 200 g of mascarpone

- 2 eggs


- 1 large glass of rum

- 2 spoons of sugar

For decoration:


- 24 biscuits, cat's tongues, soaked with 1 glass of marsala

- 100 g of chopped mixed candied fruit

- 4 candied cherries


How to prepare the mascarpone cream with rum

In a bowl, beat the egg yolks with the sugar, keeping the whites aside, mix until a frothy and homogeneous cream is obtained.

Add the spoonful of mascarpone, mixing it with the cream little by little, then gradually pour the rum.

Whisk the whites and add them to the cream, mixing from the bottom upwards so as not to disassemble them.

In each cup arrange six tongues of cat in the shape of a flower, wet them with marsala and fill the cups with mascarpone cream.

Garnish the surface with the chopped candied fruit and put a candied cherry in the center.

Keep in the fridge at least two hours before serving.
