Ingredients for 4 people

- 2 shallots

- 20 g of butter


- 1 bay leaf

- 2 dl of cooking cream

- 400 g of grouper fillets


- 1 sachet of saffron

- dry white wine

Preparation of saffron grouper fillets

Remove any pieces of skin and bones from the grouper fillets, wash and dry them, then cook them in a pan covered with wine, on a very low heat, stirring occasionally.

In a small saucepan, sauté the chopped shallots with the butter and bay leaf, sprinkle with a drop of the fish cooking wine, leave to reduce, add the cream and mix, then add the saffron and mix again, reducing the sauce over high heat. Salt and pepper.
