Spaghetti with pesto and fish

How to cook spaghetti with pesto and fish, simple and very tasty recipe, to be prepared in 25 minutes and including tomato and plaice fillets among the ingredients.


Ingredients for 4 people

- 400 g of spaghetti

- 50 g basil leaves


- 50 g of grated Parmesan

- 100 g of pine nuts

- 130 ml olive oil


- 3 cloves of garlic

- 250 g of tomatoes

- 400 g plaice fillets


- basil for garnishing

- salt

Preparation

1) Use the mixer to blend the pine nuts together with 100 ml of olive oil, garlic and basil leaves, previously washed.

2) Add the parmesan to the pesto and season with salt and pepper, mixing well.

3) Following the instructions written on the package, cook the spaghetti making sure they remain al dente, then drain and cool them under running water, before dripping and mixing them with a spoonful of olive oil.

4) Make a cross incision on the tomatoes, then blanch them in the water, peel them, remove the seeds and cut the pulp into cubes.

5) At this point, flavor the fish fillets with salt and pepper, browning them on both sides in the remaining oil, until they become a dark golden color.


6) After heating the spaghetti, season them well with the pesto, then pour them on the plates and cover them with the tomato cubes.

7) On each portion arrange a roasted fish fillet and decorate with basil.
