Stuffed artichokes with baked bacon

How to make artichokes stuffed with bacon, a recipe to make in the oven with a tasty filling including parsley, as well as a clove of garlic, if you like.


Ingredients for 4 people

- 8 artichokes of the same size

- 70 g of bacon


- 40 g of parsley

- 6 tablespoons of extra virgin olive oil

- little vinegar


- 1 clove of garlic -optional-

- black pepper

- salt


How to prepare artichokes stuffed with bacon in the oven

In a saucepan on the stove, boil two liters of salted and acidulated water with a few tablespoons of vinegar.

Wash the artichokes, cut the stems and immerse everything in boiling water, removed from the heat, for five minutes, then drain and let them cool, then remove the hardest external leaves and clean the stems.

Open the artichokes in the center and remove the fluff.

Wash the parsley and mince it together with the bacon, also add the minced garlic clove, if you like.

Arrange the stems and artichokes in a baking pan, straight and in a circle, sprinkle them with a pinch of freshly ground pepper and the mince prepared, sprinkle them with extra virgin olive oil, then pour two tablespoons of water onto the bottom.

Place the covered container in the oven programmed at maximum power, and cook the artichokes for about twenty minutes, turning the container in the oven halfway through cooking.

When cooked, leave the pan in the oven for three minutes before serving.
