- 1 cotechino weighing about 600 g
- cold water just enough to cover it in the pot
Preparation of boiled cotechino
Prick the cotechino repeatedly with a fork and wrap it in a thin cloth or gauze, tying the two ends with a string.
Dip the cotechino in a pot filled with cold water, put on the fire and bring to a boil.
As soon as the water boils, lower the heat and continue cooking over low heat for a few minutes.
After cooking, turn off the heat and let the cotechino rest in the cooking liquid for a few minutes.
Once this is done, remove the wrapping and arrange the cotechino, after cutting it into not too thin slices, on a very hot serving plate.
