Boiled squid rings, recipe with peas and radicchio

How to cook boiled squid rings, recipe to cook in a pot and to accompany with peas and radicchio, seasoning everything with vinaigrette.


Ingredients for 4 portions

- 1 head of red radicchio

- 5 tablespoons of extra virgin olive oil


- 1 tablespoon of balsamic vinegar

- 800 g of squid rings

- lemon juice


- 200 g of peas

- salt and pepper

Preparation of boiled squid rings

Wash the squid rings before immersing them in a pot with plenty of boiling water, containing a pinch of salt and 2 teaspoons of lemon juice.


As soon as the squid rings are tender, drain them and let them cool.

In the meantime, boil the peas aside, calculating 10 minutes from the resumption of the boil.

Clean, wash and cut the radicchio leaves into strips, then arrange them in a salad bowl and season with 1 tablespoon of oil, salt and pepper.

In a bowl, emulsify the remaining oil with balsamic vinegar, salt and pepper, mixing everything with a fork.

Spread the radicchio on the bottom of 4 serving plates and lay the squid rings on top, then distribute the peas in equal parts and season with the prepared vinaigrette.

Finally serve, garnishing as desired with lemon slices and whole radicchio leaves.
