How to make soup with chard and ricotta, a recipe that includes onion and homemade bread among the few necessary ingredients, to be served with grated Parmesan.
Ingredients for 4 portions
- Olive oil
- Ricotta gr. 250
- Chard gr. 500
- A liter and a quarter of vegetable broth
- 1 onion
- 4 slices of homemade bread
- Grated Parmesan cheese
- Salt and pepper
Preparation of chard and ricotta soup
In a saucepan, brown the finely chopped onion in 5 tablespoons of oil.
When it withers, add the well-washed chard cut into strips.

Salt a little, pepper and cook a few minutes, then pour all the boiling broth.
Cook for about half an hour and add the ricotta into small pieces.
Simmer, stirring constantly, for 2 minutes and turn off the heat.
Put the toasted slices of bread in the bowls and pour the soup over them.
Serve with the grated Parmesan.
