Ingredients for 8 people

- 1 hen

- 2 yolks


- 150 ml of cream

- 6 tablespoons of extra virgin olive oil

- 1 potato


- 1 carrot

- 1 celery stick

- 1 tomato


- 1 onion

Preparation of the gelatin terrine

Start by removing the tomato skin and letting it dry in the oven for about 25 minutes at a temperature of 120 ° C.

Prepare the broth with the tomato, carrot, celery, onion and potato.

When the broth is ready, dip the hen in it, after dividing it into 2 parts, and cook it for about 45 minutes.

Remove the chicken meat and put it in a mincer together with the egg yolk, cream, extra virgin olive oil and boiled potato.


Blend using a little cooking broth and fill a terrine mold lined with plastic wrap.

After shrinking the broth, filter 100 ml and add the vinegar and the soaked gelatin after squeezing it.

Pour the balsamic vinegar jelly onto the bowl until it reaches the edge of the mold and transfer to the refrigerator for about 1 hour.
