Ingredients for 4 people

- 4 yolks


- 80 g of sugar

How to prepare the crunchy almond cream

To make the crunchy put the almonds in the oven to toast for 5 minutes at 200 ° C.

Caramelise 120 g of sugar with water, add the toasted almonds and spread everything on baking paper, leveling with a spatula.

For the cream: boil the milk with the lemon peel inside without the white part, then remove it.

Beat the egg yolks with the sugar, add the flour and the starch, then pour the boiling milk slowly, stirring constantly with a whisk.

Put the pan on the heat, continue stirring and as soon as the cream thickens, remove it from the heat.

Leave to cool and then pour the cream into a glass container and put it in the refrigerator.
