Preparation of aubergines in oil without cooking
First wash and dry the aubergines carefully, then cut them into slices and place them in a glass container and, after salting them, place a weight on them, so as to make their water come out.
Allow 24 hours to pass, after wringing them out and arranging them in layers, adding olive oil in quantity, so as to cover each layer, add a splash of vinegar, oregano and chilli pepper in the desired quantity but without exaggerating, so as not to make the product, finally some cloves of garlic.
Once all this is done, flood everything with olive oil, taking care that it reaches the bottom, filling all the spaces between the aubergines and reaching the edge of the jar.
