How to make empty fried donuts inside, simple Tuscan original recipe, based on flour, sugar and butter, ideal for preparing donuts like those of the bar.


Ingredients for 4 people

- Gr. 300 of 00 flour

- Gr. 50 of sugar


- Gr. 40 of butter

- Gr. 20 ca. of brewer's yeast

- Grated lemon zest


- A pinch of salt

- Fry oil

How to make empty fried donuts inside

Melt the yeast in a glass of slightly warm water, add the sifted flour, sugar, melted butter and grated lemon zest, lastly the salt.


Mix all the ingredients well in order to obtain a smooth dough like that of the pizza, make a ball and put it, floured and covered with a cloth, to rise for about 2 hours in a warm place.

Then take the pasta in small quantities and make donuts by crushing them with the palm of your hand.

Put the donuts on a cloth or on a floured table, sprinkle them with some flour and cover them with another cloth, then let them rest for about 1 hour.

After frying the donuts in plenty of hot oil, drain them from the oil and roll them in sugar before serving.
