Green gnocchi with prawns

How to make green prawn gnocchi, a recipe for a first course based on fish rich in taste, made with homemade gnocchi with spinach.


Ingredients for 4 people

For the dumplings

- 120 g of white flour "00"


- 3 potatoes

- 2 eggs

- 1 bunch of spinach


- 1 tablespoon of parmesan

- salt

For the dressing


- 200 g of shrimp tails

- 10 cherry tomatoes

- 1/2 chili pepper

- 1 shallot

- parsley

- 10 g of bottarga

- 100 ml of fish broth or hot water

- 2 tablespoons of extra virgin olive oil

- salt and pepper


Preparation of the green prawn dumplings

Clean, wash and cook the spinach in a pan without adding water, then cool them under cold water, squeeze and finely chop them.

Wash and boil the potatoes in their skins by putting them in a pan with salted cold water brought to a boil, for about 20 minutes, then drain, peel and pass them in the potato masher.

Put the mashed potatoes in a bowl with the eggs, parmesan, spinach, salt and flour.

Quickly mix all the ingredients, cover with a napkin and leave to rest for 10 minutes.

On a work surface, take the pasta and form small loaves with your hands, with the help of flour.

Cut the loaves into chunks giving them a slightly rounded shape.


Shell the prawns and cut them into small pieces.

Wash the cherry tomatoes, divide them into 4 parts and remove the seeds.

In a pan with the oil and the crumbled red pepper, brown the chopped shallot.

Add the tomatoes, and after 2 or 3 minutes the prawns.

Deglaze with fish broth or hot water, lower the heat and reduce the sauce, sprinkle with parsley and add salt and pepper.

In a pan with salted boiling water, dip the gnocchi, when they come to the surface, drain them and transfer them to a pan with the sauce, then let them thicken over high heat.

Complete the dish with the grated bottarga and serve immediately.
