Recipe for cooking the potato and egg omelette, a quick method of preparation, from cutting potatoes to beating eggs, up to cooking in a pan.


Ingredients for 4 portions

- olive oil

- 4 potatoes


- 6 eggs

- salt

Preparation of the potato and egg omelette

Cook the potatoes cut into chunks in a pan with a little olive oil, salt and pepper.

When the potatoes are cooked, drain them well from the oil by putting them in a colander.

After putting the potatoes back in the pan, add the beaten eggs with a pinch of salt and cook well on both sides.
