How to make battered courgette flowers

How fried courgette flowers are made, recipe with egg, flour and oil batter, to be cooked in a pan and served still hot.


Ingredients for 4 portions

- White wine

- Olive oil


- Salt and pepper

- 12 or 16 courgette flowers

- Flour gr. 100


- 1 egg

- Fry oil

Preparation of fried courgette flowers

Put the flour in a bowl, add 2 tablespoons of oil, an egg yolk, salt and pepper.


Pour half a glass of white wine and the water necessary to make a smooth and not too thick batter.

Leave it to rest for about an hour and add the whipped egg whites.

Clean the flowers by removing the stems, the external green leaves and the internal pistil, then pass them in the batter and put them in a pan in boiling oil, frying them until golden brown.

Finally put them to dry on a sheet of kitchen paper, salt them and serve immediately while still hot.
