Ingredients for 4 people

- 400 g of egg presses

- 4 tablespoons of extra virgin olive oil


- 2 artichokes

- 70 g of speck

- 1 Treviso radicchio


- 2 cloves of garlic

- 3 tablespoons of seasoned ricotta

- parsley


- salt and pepper

How to prepare pasta with artichokes, radicchio and speck

Clean the artichokes and cut them into thin strips.

Cut the speck into small strips.

In a pan heat the olive oil with the cloves of garlic with the skin, and cut into two.

Add the speck and then the artichokes, then sauté everything well over high heat.

Wash the radicchio and cut it into fine julienne strips, put it in a pan together with the speck and artichokes, then season with salt and pepper.

Add a little cooking water to the pasta and sprinkle with chopped parsley.

In a pan with salted boiling water, dip the torchietti and drain when al dente.

Transfer them to the pan with the sauce, sauté them and mix well.


Serve them with a generous grated of seasoned ricotta.
