Penne with courgettes and ricotta

How to cook penne pasta with courgettes and ricotta, a recipe comprising basil among the few necessary ingredients, ideal for lunches or dinners especially in the summer.


Ingredients for 4 people

- 400 g of pens

- 350 g of cottage cheese


- 1 kg of small courgettes

- 40 g of grated Parmesan

- 4 cloves of garlic


- 1 bunch of basil

- 2-3 tablespoons of olive oil

- salt


- pepper

Preparation

1) Start by cooking the penne in abundant salted water, calculating the cooking time from the resumption of the boil, according to the cooking times indicated on the package.

2) After cleaning the courgettes, blanch them for 2 minutes in salted boiling water, then pass them under cold water and cut them into centimeter thick slices.

3) Peel the garlic and chop it.

4) Wash the basil and dry it before cutting it into strips.

5) In oil heated in a pan, brown the courgettes for a minute, then add the garlic.

6) After mixing the penne with courgettes, basil, ricotta, salt and pepper, sprinkle with the Parmesan and serve.
